  • For the Chocolate Chip Streusel:
  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter, cold and cubed
  • 1/3 cup mini chocolate chips

Instructions

  1. Brown the Butter: In a small saucepan over medium heat, melt the butter. Stir constantly as it foams, then turns golden brown and smells nutty (about 4-6 minutes). Immediately pour into a heat-safe bowl to cool slightly.
  2. Prepare the Zucchini: Grate the zucchini using a box grater or food processor. Place grated zucchini in a clean kitchen towel and squeeze out excess moisture to get about 1 cup drained zucchini.
  3. Mix Wet Ingredients: In a large bowl, whisk together mashed bananas, brown butter, and granulated sugar until smooth. Add eggs one at a time, whisking well after each addition, then stir in vanilla extract.
  4. Combine Dry Ingredients: In a separate bowl, sift together flour, baking soda, baking powder, salt, and cinnamon.
  5. Mix Wet and Dry: Gradually fold dry ingredients into wet mixture using a spatula. Fold in grated zucchini last, distributing evenly without overmixing.
  6. Prepare Streusel Topping: In a small bowl, combine flour, brown sugar, and cinnamon. Add cold cubed butter and mix with fingers or pastry cutter until mixture resembles coarse crumbs. Stir in mini chocolate chips last.
  7. Fill Muffin Tin: Line muffin tin with liners or grease well. Spoon batter evenly into each cup, filling about 3/4 full. Sprinkle a generous amount of streusel topping over each muffin.
  8. Bake: Bake in preheated oven at 350Β°F (175Β°C) for 20-25 minutes. Check doneness with a toothpick; it should come out with a few moist crumbs but no wet batter.
