Instructions

  1. Preheat oven to 375Β°F (190Β°C). Grease a 9×9-inch baking dish with butter or nonstick spray.
  2. Peel and slice peaches to get about 4 cups. Toss peach slices with 2 tablespoons flour, 3/4 cup brown sugar, 1/4 cup granulated sugar, 1 teaspoon cinnamon, 2 tablespoons bourbon, and 1 teaspoon vanilla extract. Mix gently and set aside to macerate for about 10 minutes.
  3. In a medium skillet over medium heat, melt 1/2 cup unsalted butter. Stir continuously until butter foams and turns deep golden brown with a nutty aroma (about 5 minutes). Remove from heat and let cool slightly.
  4. In a mixing bowl, whisk together 1 cup all-purpose flour, 1 teaspoon baking powder, and 1/4 teaspoon salt. Add cooled brown butter and 1/2 cup whole milk or buttermilk. Stir until just combined; batter should be thick but spreadable.
