A quick and easy single-layer chocolate snack cake loaded with Reese’s peanut butter cups. Ready in about 30 minutes, this tender, fudgy cake is perfect for any occasion.

  • 1 Β½ cups (180g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • β…“ cup (40g) unsweetened cocoa powder (Dutch-processed or natural)
  • 1 teaspoon baking soda
  • Β½ teaspoon salt
  • 1 large egg, at room temperature
  • 1 cup (240ml) milk (whole or 2%)
  • β…“ cup (80ml) vegetable oil (canola or avocado)
  • 1 teaspoon vanilla extract
  • Β½ cup (120ml) hot water or coffee
  • 1 cup (about 810 regular-sized) Reese’s Peanut Butter Cups, roughly chopped
  • Powdered sugar for dusting (optional)
  • Chocolate ganache or peanut butter drizzle (optional)

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line an 8Γ—8-inch square baking pan with parchment paper, leaving overhang on two sides. Lightly grease the parchment.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until evenly combined.
  3. Make a well in the center of the dry ingredients and add the egg, milk, oil, and vanilla extract. Stir gently with a spatula until just combined (a few lumps are fine).
  4. Pour in the hot water or coffee and stir until fully incorporated. The batter will be thin.
  5. Fold in the chopped Reese’s cups, reserving about ΒΌ cup to sprinkle on top.
  6. Pour the batter into the prepared pan and spread evenly. Sprinkle the reserved Reese’s chunks on top and press them down lightly.
  7. Bake for 22-26 minutes, until a toothpick inserted into the center comes out with a few moist crumbs. Let cool in the pan for 10 minutes, then lift out using the parchment sling and transfer to a cooling rack.
  8. Cool completely before slicing into 9 or 16 squares. Dust with powdered sugar or drizzle with chocolate ganache if desired.

Notes

For best results, use room temperature ingredients. Don’t overbake; check at 22 minutes. The cake can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 3 months.
