This Halloween Spider Veggie Tray Platter is a fun, healthy, and easy-to-assemble snack that turns vegetables into a spooky centerpiece. Perfect for parties, it features a bell pepper spider with pretzel legs and a ranch dip spider web, surrounded by fresh veggies.

  • 1 large black bell pepper (or red or orange)
  • 810 mini pretzel sticks
  • 2 whole black olives (pitted)
  • 1 cup broccoli florets (fresh, bite-sized)
  • 1 cup cherry tomatoes (washed, halved if large)
  • 1 cup cucumber slices (rounds or half-moons)
  • 1 cup baby carrots (whole or cut into sticks)
  • 1 cup snap peas or sugar snap peas (trimmed)
  • 1/2 cup ranch dressing
  • 1 tablespoon sour cream (optional, to thin dip)

Instructions

  1. Wash and dry all vegetables thoroughly. Cut broccoli into bite-sized florets, slice cucumber into rounds or half-moons, halve cherry tomatoes if large. Leave baby carrots and snap peas whole. Set aside.
  2. Pour ranch dressing into a small bowl. If desired, stir in 1 tablespoon sour cream for a thinner consistency. Spoon a small amount of dip into a piping bag or small zip-top bag. Set bowl aside.
  3. Take the large bell pepper. Using a sharp knife, carefully cut off the top (stem end) and set aside. Cut off the bottom so the pepper has a flat, stable base. Turn the hollow pepper tube upside down so the flat bottom is on the cutting board. This is the spider body.
  4. Gently push mini pretzel sticks into the sides of the bell pepper, about halfway down, at an angle to resemble spider legs. Fit about 4-5 on each side. If pretzels are too long, snap them in half.
  5. Using a paring knife, cut a small, thin slit in the center of each black olive to create pupils. Place olives on top of the bell pepper near the front to look like eyes. Use a tiny dab of dip to help them stick.
  6. Place the large serving platter in the center of your workspace. Place the small bowl of ranch dip in the center of the platter.
  7. Using the piping bag with leftover dip, pipe thin lines from the edge of the bowl outward toward the edge of the platter (like spokes on a wheel). Pipe 4-5 lines, then pipe curved lines connecting the spokes to create a web pattern.
  8. Arrange the prepared veggies around the dip bowl, covering the lines of the spider web. Place broccoli, tomatoes, cucumbers, carrots, and snap peas in a colorful, inviting pattern, filling in gaps so the platter is not visible underneath.
  9. Carefully place the assembled bell pepper spider on top of the veggies, right next to the dip bowl, positioned as if crawling toward the dip.
  10. Serve immediately. If making ahead, prep veggies and store in the fridge; assemble just before serving.

Notes

For best results, use a round, symmetrical bell pepper. Soak broccoli and snap peas in ice water for 10 minutes after cutting to keep them crisp. If pretzel legs are wobbly, use a dab of cream cheese or peanut butter as glue. The platter is best served fresh; store leftovers separately.
