  • 1 teaspoon (6g) fine sea salt
  • ½ cup (120g) baking soda (for water bath)
  • Coarse salt (for topping)
  • 1 large egg beaten with 1 tablespoon water (egg wash)
  • 8 ounces (225g) sharp cheddar cheese, freshly grated
  • ¾ cup (180ml) German-style beer (Oktoberfest lager, pilsner, or hefeweizen)
  • 2 tablespoons (28g) unsalted butter (for cheese sauce)
  • 2 tablespoons (16g) all-purpose flour (for cheese sauce)
  • ¼ cup (60ml) whole milk
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110°F) and brown sugar. Sprinkle yeast on top, stir gently, and let sit for 5-10 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined. Gradually add remaining flour, ½ cup at a time, until dough comes together and is slightly sticky but not wet.
  3. Knead: Turn dough onto a lightly floured surface and knead for 6-8 minutes (or 4-5 minutes in a stand mixer with dough hook) until smooth and elastic.
  4. First rise: Place dough in a lightly greased bowl, cover with a clean kitchen towel, and let rise in a warm spot for 45-60 minutes until doubled in size.
  5. Shape the bites: Punch down dough, divide into 4 equal pieces. Roll each into a 12-14 inch long rope, 1 inch thick. Cut each rope into 1-inch pieces (about 48-52 bites total).
  6. Baking soda bath: Bring 8 cups of water to a boil in a large pot. Carefully add ½ cup baking soda (it will bubble up). Reduce to a simmer. Working in batches, drop pretzel bites into water for 20-30 seconds until they float. Remove with a slotted spoon and place on a parchment-lined baking sheet.
  7. Egg wash and salt: Preheat oven to 425°F (220°C). Brush each bite with egg wash and sprinkle generously with coarse salt.
