These crispy bacon wrapped jalapeño popper bites are the perfect party appetizer. With just three main ingredients, they are quick to assemble, naturally gluten-free and keto-friendly, and always a crowd-pleaser.

  • 8 ounces full-fat cream cheese, softened
  • 68 fresh jalapeños, sliced into ½-inch rounds and seeded
  • 8 slices standard-cut bacon, cut in half crosswise
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Pinch of salt
  • Pinch of black pepper
  • Optional: everything bagel seasoning, chopped fresh chives, ranch dressing, smoked paprika

Instructions

  1. Preheat your oven to 400°F (200°C). Place a wire rack inside a rimmed baking sheet and set aside.
  2. Wash the jalapeños and slice them into ½-inch thick rounds. Use a small spoon or melon baller to remove the white membranes and seeds. Pat the rounds dry with a paper towel.
  3. In a small bowl, combine the softened cream cheese, garlic powder, onion powder, salt, and black pepper. Stir until smooth and well combined.
  4. Fill each jalapeño round with the cream cheese mixture, either by piping it from a zip-top bag with the corner snipped off or by using a small spoon. Fill so the cream cheese is level with the top of the pepper.
  5. Wrap each filled jalapeño round with a half-slice of bacon, overlapping slightly. Secure with a toothpick that has been soaked in water for 10 minutes.
  6. Arrange the wrapped bites on the wire rack, making sure they aren’t touching.
  7. Bake for 20-25 minutes, until the bacon is deeply golden brown and crispy. Start checking at the 18-minute mark.
  8. Let the bites rest on the rack for about 5 minutes. Remove toothpicks before serving, or leave them in for easy grabbing.

Notes

For best results, use a wire rack to allow air circulation and prevent soggy bottoms. Soak toothpicks in water for 10 minutes to prevent burning. Wear gloves when handling jalapeños to avoid capsaicin burns. You can assemble the bites up to 24 hours in advance and refrigerate. Reheat in the oven or air fryer to restore crispiness.
