  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries; choose seasonal for best flavor)
  • Β½ cup crunchy granola (homemade or store-bought)
  • Optional: a dollop of Greek yogurt or coconut yogurt for extra creaminess

Instructions

  1. In a mixing bowl or mason jar, combine 3 tablespoons of chia seeds with 1 cup (240 ml) of unsweetened almond milk, 1 tablespoon of honey or maple syrup, Β½ teaspoon vanilla extract, and a pinch of sea salt. Stir thoroughly to prevent clumping. If using a jar, screw the lid on and shake vigorously for about 30 seconds.
  2. Cover the bowl with plastic wrap or close the jar tightly and refrigerate overnight or for at least 4 hours until the chia seeds absorb the liquid and swell, creating a thick pudding.
  3. Rinse and pat dry your fresh berries. Slice any larger fruits like strawberries or peaches into bite-sized pieces. Measure out your granola and keep it ready to assemble.
  4. In your serving glasses or jars, start with a layer of chia pudding (about ΒΌ cup or 60 ml), add a layer of fresh berries, then a sprinkle of granola. Repeat layers until the jar or glass is nearly full, finishing with a few berries and a pinch of granola on top.
  5. Serve immediately if you like the granola crunch, or refrigerate assembled parfaits for up to 4 hours to let flavors meld. Add granola right before serving if you prefer it extra crunchy.

Notes

Stir the chia seed mixture well initially and again after 10-15 minutes during the first hour to prevent clumping. Keep granola separate until serving to maintain crunch. You can swap almond milk for coconut or oat milk, and honey for maple syrup or agave nectar for vegan options. Toast granola lightly before assembling for extra crunch and flavor.
