  • 1 cup (150 g) fresh strawberries, hulled and chopped
  • 23 tablespoons (1522 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon freshly squeezed lemon juice
  • 2 tablespoons (30 ml) cold heavy cream (optional but recommended)

Instructions

  1. Wash, hull, and chop 1 cup (150 g) of fresh strawberries into small pieces. Pat dry gently to avoid excess moisture.
  2. Place the softened 8 oz (225 g) cream cheese in a mixing bowl. Using an electric hand mixer on medium speed, whip until smooth and creamy, about 2-3 minutes.
  3. Gradually add 2-3 tablespoons (15-22 g) of powdered sugar and 1 teaspoon vanilla extract to the cream cheese. Continue whipping until fully incorporated and fluffy. Taste and adjust sweetness if needed.
  4. In a separate small bowl, whip 2 tablespoons (30 ml) of cold heavy cream until soft peaks form. Gently fold this whipped cream into the cream cheese mixture to enhance fluffiness (optional).
  5. Add 1 teaspoon of freshly squeezed lemon juice to the mixture and fold gently.
  6. Carefully fold the chopped strawberries into the whipped cream cheese mixture, trying not to deflate the fluffiness.
  7. Refrigerate the spread for at least 30 minutes before serving to let flavors meld and texture firm up slightly.
  8. Spread generously on toasted bagels, warm toast, or crackers. Enjoy immediately or store in an airtight container in the fridge.

Notes

Use room temperature cream cheese for easier whipping. Powdered sugar dissolves smoothly and keeps the spread silky. Fold strawberries gently to maintain fluffiness.
