Ingredients

Scale
  • 4 cups (480 g) all-purpose flour, plus extra for dusting
  • 1/4 cup (50 g) granulated sugar
  • 2 1/4 teaspoons (one packet) instant yeast
  • 1 teaspoon salt
  • 1 cup (240 ml) whole milk, warmed to about 110°F (43°C)
  • 1/4 cup (56 g) unsalted butter, melted, plus extra for brushing
  • 1 large egg, room temperature
  • 1/3 cup (80 ml) fresh orange juice, freshly squeezed
  • 1 tablespoon orange zest, finely grated
  • 1/3 cup (70 g) brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1 cup (120 g) powdered sugar
  • 2 tablespoons orange juice (for glazing)

Instructions

  1. Warm the milk to about 110°F (43°C) and pour into a large mixing bowl.
  2. Stir in instant yeast and granulated sugar; let sit for 5 minutes until foamy.
  3. Whisk in egg, fresh orange juice, orange zest, and melted butter.
  4. Gradually mix in flour and salt until combined.
  5. Knead dough on a floured surface for about 8 minutes until smooth and elastic.
  6. Place dough in a greased bowl, cover, and let rise in a warm spot for 30 minutes until nearly doubled.
  7. Mix brown sugar and ground cinnamon for the filling; set aside.
  8. Punch down dough and roll into a 15×10 inch rectangle on a floured surface.
  9. Brush dough with melted butter and sprinkle cinnamon sugar evenly over it.
  10. Roll dough tightly from the long edge into a log; pinch seam to seal and cut into 12 slices.
  11. Place rolls in a greased 9×13 inch pan, cover, and let rise for 20 minutes until puffy.
  12. Preheat oven to 350°F (175°C) and bake rolls for 25-28 minutes until golden brown.
  13. Whisk powdered sugar and orange juice to make glaze.
  14. Drizzle glaze over warm rolls and serve immediately.

Notes

Milk temperature is critical for yeast activation; do not over-knead or add too much flour to avoid dense rolls. Use fresh orange juice and zest for best flavor. The easy rise technique shortens rising times without sacrificing fluffiness. Rolls can be made ahead and refrigerated overnight after first rise. Freeze baked or unbaked rolls for up to 3 months.
