Easy One-Pot Pasta Recipe with Creamy Tomato Herb Sauce

A quick and comforting one-pot pasta dish with a creamy tomato herb sauce, perfect for busy weeknights or cozy dinners.

  • 1 pound (450g) pasta (penne, rigatoni, or spaghetti)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 can (28 oz / 800g) crushed tomatoes
  • 3 cups (720ml) vegetable or chicken broth
  • ½ cup (120ml) heavy cream (or coconut cream for dairy-free)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and freshly ground black pepper, to taste
  • Fresh basil leaves, chopped (optional)
  • Grated Parmesan cheese (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add minced garlic and chopped onion; sauté for 3-4 minutes until soft and fragrant.
  2. Stir in dried oregano and dried basil; cook for another 30 seconds.
  3. Add crushed tomatoes and broth to the pot; stir well to combine.
  4. Pour in pasta and press down gently to submerge as much as possible in the liquid; do not stir yet.
  5. Increase heat to medium-high and bring to a gentle simmer. Cover the pot and cook for 10 minutes.
  6. Remove lid and stir pasta gently to prevent sticking. Taste for doneness; if needed, cover and cook another 3-5 minutes until al dente.
  7. Reduce heat to low and stir in heavy cream. Season with salt and freshly ground black pepper to taste.
  8. Remove from heat, sprinkle with chopped fresh basil leaves, and serve immediately with grated Parmesan if desired.

Notes

Keep a close eye on the liquid level during cooking; add broth or water if the sauce becomes too thick before pasta is done. Stir gently halfway through cooking to prevent sticking. For dairy-free, substitute heavy cream with coconut or cashew cream. Use short pasta shapes like penne or rigatoni for best sauce adherence.
