  • 1 can (14.5 oz / 411 g) diced tomatoes, drained
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup (about 100 g) shredded sharp cheddar cheese or cheese blend (mozzarella optional)
  • 2 tablespoons fresh cilantro or parsley, chopped (optional)
  • Optional: 1/2 cup corn kernels or diced zucchini for added veggies

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Drain and rinse the canned beans thoroughly to reduce sodium and starch.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add chopped onion and sauté for about 5 minutes until soft and translucent.
  5. Add minced garlic and diced bell pepper; cook for another 3-4 minutes until fragrant and slightly softened.
  6. Stir in diced tomatoes, chili powder, cumin, smoked paprika, salt, and pepper; cook for 2 minutes to let spices bloom.
  7. Add drained beans and optional veggies (corn or zucchini); stir gently and warm through for about 3 minutes.
  8. Transfer the mixture to an oven-safe 9×9-inch baking dish and spread evenly.
  9. Sprinkle shredded cheese over the top.
  10. Bake uncovered for 20-25 minutes until cheese is melted, bubbling, and lightly golden.
  11. Remove from oven and let rest for 5 minutes to set.
  12. Garnish with chopped cilantro or parsley before serving.
