  • 1 cup pimento cheese spread (recommend Boar’s Head or homemade)
  • 2 tablespoons mayonnaise (preferably Duke’s or Hellmann’s)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon apple cider vinegar
  • Salt and freshly ground black pepper, to taste
  • Smoked paprika, for garnish
  • Fresh chives, finely chopped (optional)

Instructions

  1. Place 12 large eggs in a single layer in a medium saucepan. Cover with cold water about 1 inch above the eggs. Bring to a boil over medium-high heat, then reduce to a gentle simmer and cook for exactly 10 minutes.
  2. Transfer eggs to an ice bath for 5 minutes to stop cooking and make peeling easier.
  3. Tap each egg gently on a hard surface and peel under cold running water to remove shells cleanly. Pat dry with a towel.
  4. Slice each egg in half lengthwise. Carefully remove the yolks and place them in a mixing bowl. Set the whites aside on a serving platter.
  5. Mash the yolks with a fork until smooth. Add 1 cup pimento cheese, 2 tablespoons mayonnaise, 1 teaspoon Dijon mustard, and 1/2 teaspoon apple cider vinegar. Mix until well combined and creamy. Season with salt and freshly ground black pepper to taste.
  6. Transfer the yolk mixture to a piping bag fitted with a star tip or a resealable plastic bag with a small corner cut off. Pipe the filling evenly into the egg white halves, creating pretty swirls.
  7. Sprinkle smoked paprika over the filled eggs and top with finely chopped fresh chives if using.
  8. Refrigerate for at least 30 minutes before serving to let flavors meld and filling set slightly.

Notes

Use older eggs for easier peeling. Adjust salt and pepper to taste as pimento cheese saltiness varies. Chilling improves flavor and presentation. If filling is too thick, add a teaspoon or two of milk or buttermilk to loosen. Piping creates a nicer presentation but a spoon works in a pinch.
